Howdy all. First Cook today on my new Masterbuilt 40 in Electric Smoker here in Cuero, Tx. Used the 3-2-1 method with The Johny Trigg wrapping method. I did 2 racks 1 St. Louis Cut and 1 Baby Back rack. They came out awesome for my first Cook. They could have had more smoke flavor. I dont think I added enough chips in the first few hours. I preferred the baby back. .Any suggestions on adding wood chips and when. Looking forward to many more successfull cooks.

First off, welcome to SMF!

You add chips when you see the smoke stop, which will happen every half hour or so. You can also get a pellet burner that will give you smoke for 10 hours without refilling it.

I bought the AMNPS and pulled the chip chute out of my MES and tossed it.

 use the dust for shorter smokes and the pellets for longer ones.
