I am a slightly seasoned Smoker, Ribs, chicken, Butts, Brisket but never a chuckie. So here goes nothing. Wifey likes beef more than pork so I hope this goes well. Any tips on IT. Should I go to 195. Then wrap and rest it. or?????

Below are a couple Step by Steps. One is of one Chucky. The other is 2 Chuckies in one Smoke.

Single Chucky:

Four hours in, at steady 250 temp. I have reached IT of 160. So I wrapped to bring temp up quicker. I started late I guess. Gotta get the food on the table. Fresh corn in husk on grill. Wifey has made some potato salad. Dinner should be yummmmmmm
