I was wondering if you got a smoke planned sometime soon if you could get a couple pics of your firebox and coals once you get the temp right. I see plenty of pics of delicious food, and by all means keep those coming as well. But, I am still having rtrouble getting my smoker to hold the right temp for a long time. IF someone could take a pic or so of their firebox and amount of coals inside of it that would be really helpful. Im a newb, what can i say.
 
What kind of pit ya runnin, if it's an offset, i can send ya lot's of pic's!!

it may also take awhile for you to get to know your smoker, dampers open all the way, half way open, gotta give it some time and experimenting
 
its a little offset rig. I bought it from someone real cheap i actually dont know what brand it is. It was my first one and it was cheap. Any pics of your heat source setup?
 
this is during a smoke.... i started with a bed of charcoal lit in a chimney.... used oak for my main fuel.... then added this pear ... after the pear burned out i continued to use oak for temperature... it turned out good....
