Fatty???? Wood of Choice?

Hickory is my main wood a choice, however it is a heavier smoke, which I like bein a hillbilly. My next choice would be apple er maple followed up by cherry. Ya can mix some hickory in with apple er maple fer a medium smoke ifin yall like. Taste is such a personal thin, yall just gonna have ta try different woods ta see which yall prefer, that ain't bad niether, cause ya get ta eat the experiment!

 
Matter of pref... however, if it's mainly a pork fatty...man...applewood and pork kicks butt! It's a bit on the light/sweet side...make one refil hickory if ya wanna have a bit more bite.
