After a long drive home(16+ hours) from Florida Saturday night into Sunday morning, I had a hankering for some bbq. Plan was to pick up some BB ribs, and other ingredients at the grocery store as we got close to home. Store was out of BB ribs, and only had frozen spares(guess alot of folks were cookin ribs on Fathers Day). So I picked up about 7# of rib tips instead. This was my second attempt at rib tips, and do them pretty much the same as I do ribs(timing is obviously different, but the technique is similar). Rinse with white vinegar, rub with yellow mustard, and then apply my dry rub. I then smoke them until they are done 2-3 hours. For the last 20 minutes or so I pull them off the smoker and tent them in foil that has honey, some rub, and about 3 tbsp of apple juice on it, and then put them back on the smoker for 20 mins.

they turned out nice, tender moresels of smoked porky goodness.

rib tips are quickly becoming one of my favorite items. I like to make them as a mid smoke snack when I get spares that are trimmed to a K.C. cut.
 
I have never tried short ribs that way before I have always braised and simmer with chapoles peepers. But theses sound and look very good I guess I'll have to give them a try. Thanks for the idea.
