Experienced griller, but a "virgin" with a smoker

Hello all.

My name is Brent and I live in Huntsville, Alabama. I've had more grills over the years than I can count but my wife and kids threw me a curve ball this Father's Day with a Char Grilled Duo, complete with the side fire box (SFB)!

My kids have already placed an order for smoked ribs and my wife wants brisket and a pork shoulder/butt.

I would like to "practice" on something that wouldn't make me cringe about ruining a great cut of pig if I mess up and turn it into a pile of soot. Any advice will be greatly appreciated.

If you didn't read the Terms of Service notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums. Rule #11......"Off Site Links are not allowed here at SMF" is something new. There are other simple guidelines for all of us to remember as we interact here.

Thanks for the invite. I'll definitely be keeping an eye on the group. I'm a little confused about the comment on rule 11 of the terms. Was that a general statement about protocol or did something in my original post get flagged?

Whew...I thought I'd managed to get in hot water (or smoke) already. Good advice and I've just subscribed to the Alabama group. Now I just have to find Sharon Johnson Park.

Nah....you are totally fine.  Sharon Johnson Park is out over Chapman Mountain....closer to New Market off Winchester Road. The only bad thing with that is the park closes at Sundown.  Would be nice for us to find a place we could spend all day, and/or folks that want to camp or bring RV's could come too.

My wife has been getting the itch to go camping for a while. We used to spend one or two weekends a month at a campground back-in-the-day.
