End to a poultry week

So I was out of town with three guys who can’t cook, and want me to make mississippi pot roast every night . Last week we compromised and Mississippi chicken so we compromised on Nashville hot shredded chicken sandwiches Tuesday. Wednesday we found out that job was over, and the last day we would eat at the mom and pop bbq place we had been eating at. I hadn’t tried the chicken quarter yet so what the who.

get home Wednesday and it taco spaghetti thank god , but for the fourth it was supposed to be leftover mexican pp and thighs. Our guests we’re ill so we ate the pp and have had a chicken dish ever since.

so tonight was the last dish of thighs smoked on the grill with hickory and the tube with mc honey hog, mixed some butter and Kroger brand hot honey, and glaze at 165*. Then glazed with just the honey and let rest. No more chicken except for three meals of leftovers. Tomorrow is corned beef with the leftover cabbage from chileReno apple cran slaw

Intrigued by the shredded Nashville hot sandwiches. How did you do them?
Unfortunately I didn’t have the smoker or most of my gear it was in a crack pot with chicken thighs using this recipe So we could have a beer and eat when we got off. Had I known I would have smoked at the house then made at the bnb. I recommend upping the cayenne this is a neutral sweet heat

Kidding aside. Sounds like a nice way to get the yard bird population under control.

If I was at home it probably would have been spog on pecan, or almond till it pulled nicely. Then into the sauce pan to simmer for an hour or two. Then make the sauce and serve possibly with steak fries from the air fryer, or a piece of Tex’s toast and mashed potatoes. A open face sandwich if you will, and some fried green beans just my two cents 🍻
