ECA question????

    I want to try using ECA in my next batch of snack sticks but I can't find a recommended amount anywhere? Looking to see whats a good place to start, any help or advise would be great! I usually make 5# or 6 1/4# batches at a time.

    Sausagemaker website says to use 3oz (85 grams) to 25 lbs meat, or 3.4grams per lb. so a 5lb batch would need 17grams ECA.

  3. To simplify things I use about 1 tsp ECA per pound of meat, I have used as much as 1 1/4 tsp
    per pound without any detrimental effects on the sausage. More than that could lead to problems
    So anywhere around that amount or less should work fine.
