I have not seen this addressed yet and wanted to know. I am going to deep fry one and oven bake another (for a friend to take home). I was only going to brine the oven baked one, but can brine them both if you can deep fry with a brined turkey.
Just make sure there is no extra moisture left before you fry it. I just inject mine personally. As long as the oil is at 350, it will put a fast fry on it and trap the juices inside.
