I'm a newbie to smoking although I've been curing pork bellies for a couple years for pancetta (and also making guanciale). Anyway, I just got a smoker a couple of months ago and have been smoking bellies. This smoking thing is money! I'm going to start curing my 4th or 5th batch of bacon tomorrow and since I was also going to make ribs I was wondering about using a mop on the bacon. I see Captain Morgan and apple juice is a good mop. Can I use it on the bellies?

Yes I mop my bellies and my buckboard Bacon....apple cider is good so is capt.morgan...some use apple and jack dan....
