I may have screwed up, I skipped the desalination of pastrami after brining.
Placed the meat on the smoker for a couple hours, got it to 135F. Realized the missed step and pulled the meat from the smoker. Rinsed off the rub and set in clean water. This has been in water and under 40F overnight. Can I reapply the rub and restart the smoke? Is this salvageable?
