I do my ribs like this:

First Brine them in:

2 Gal. Water
1/2 Gal Apple Cider
2 Onions quartered
2 Heads Garlic, peeled and smashed
1/4 cup Onion Powder
1/4 cup Garlic Powder
1 Cup Dark Brown Sugar
1/4 Cup Molasses

Mix the Brine well until Sugar is dissolved.
Add ribs to bucket and soak overnight or upto 24 hours in the refrigerator.
Sprinkle with a bit of your favorite rub.
Put ribs in oven at 225 degree's for 4 hours.
Put ribs in smoker for 3 hours or to grill with smoke.
I then go to the grill and brown on high heat then set to the cooler side and finish until the bone pulls away easily from the meat. Add favorite sauce about 10 minutes before finish. I like to use either hickory or apple in the smoke box on the grill.

Plate and watch out for the stampede!

Sound great, I use a similiar brine myself. We'd really like some Q View, so keep that camera around when you're smokin'.
