Some might consider this rib abuse, but I of course left some plain as well and cooked them all the way in the smoker. I had a bunch of them and so I finished the weekend with a nice navy bean soup. Great flavor and for once it was nice not to be teased with the lack of meat on a ham hock. Tons of sweet smoky meat.
