Cured and Fermented Venison Summer Sausage

    Repost for anyone interested in curing and fermenting venison summer sausage

    Use a culture (I used F-RM-52) - not Fermento

    Basically, you don't HAVE to ferment if you cure summer sausage - this is an unusual recipe for that reason, but the additional taste you get is well worth the effort!

    Now with my new found love to make some really good sausage. I like this recipe of yours. I will have to put it in the list of to try listings. So thanks for the link.
