did my first non slow and low cook and no water bowl, the other day on the WSM! A rindless pork loin cooked in 2 hours, came out great!

Now if I was to cook a boneless pork leg roast, for 2 to 3 hours in the wsm, will the skin rind crackle? Or am I better to use the weber kettle? thanks
