Cowboy Candy - Buck Yeah!

I had a video popup on my YouTube suggestions a few days ago about making Cowboy Candy. That let me down the rabbit hole of related videos. It seems like there are a lot of varieties on the origins and the recipe to use. Like usual I took the best of each of them and combined it into my own.

I started with 20 large store bough jalapenos and a few smaller, but more ripe ones from my garden. I ran them thru my Ninja food processor in slice mode. I did the same with an extra large red onion. Then I salted and mixed it well with About 2-3 tablespoons of sea salt and let it sit in the fridge overnight.

This drew out about a cup of liquid. It shrunk quite a bit. The liquid was discarded.

I also diced up about 1 1/2 cups of fresh pineapple.

Next up was team spice.

4 Tablespoons of Brown Sugar
2 cups of raw sugar
1 Tablespoon of Mustard Seeds
1 Tablespoon of Fennel Seeds
1 Tablespoon of Cumin
1 Tablespoon of Coriander Seeds
2 Tablespoons of Onion Powder
3 cups of Apple Cider Vinegar

These were all heaping Tablespoons.

I first placed all the spices and seeds in a coffee grinder and broke them down into a powder.

I used a large deep pot make sure there was no way I would boil over the molten sugar onto our fairly new stove top. I added all the ingredients above and brought it to a boil for about 5 minutes. Then I added all the peppers and pineapple. I waited until it boiled again for 5 more minutes then brought it to a simmer for another 5.

This made enough to fill (EDIT) a 48 Oz jar.

I took a few bites while it was still hot and it exceeded my expectations.

Damn Chris!! That looks good!!
They are. I had a few more at room temperature and the sweetness hits you first followed by a strong kick of the spicy. They are very addictive and once chilled in the fridge I bet they will be even better.
 
Looks really good from up north West Coast Chris. I've never had it, but would be more than willing to give a go.

Looks amazing! My wife’s garden has been cranking out the jalapeños this summer, definitely gonna try this out.

mama just made our first batch. not sure of recipe but similar and sweet. she said we tried them last year at the Florida smokin gathering, but I drank a skosh that weekend. pretty much wiped the cranial C;drive.

My wife brought me home a burger with mushrooms on it. I replaced the mushrooms with the cowboy candy and it made it taste awesome.

Last thing. As a tribute to Bearcarver who is no longer with us who made a post in 2020 that I found while researching this. I smoked up a pork shoulder tonight so I could make a pulled pork sandwich with cowboy candy. I got started way too late so it was a midnight snack.

I toasted fresh bread with melted pepper jack on one side then piled on the cowboy candy and pulled pork. It has fresh fruit so it is healthy! :emoji_sunglasses:
