Hi All, can anyone tell me why, my Grandfather would dip his cotton / muslin sausage bags in boiling beef lard, prior to stuffing them,

Sorry but I'm chewing through our family recipe and I found that noted, just trying to wrap my head around as to why?
 
To keep the meat from sticking to the bag more than likely. As he cooked the SS, the lard would melt off and the smoke could penetrate a bit.

That's my guess.
 
Mmmmmm, boiled beef lard!

I soak mine in water prior to stuffing them. I pre wash them and dry them prior to that in vinegar and water 50/50 mix. Never had a problem with them sticking.
