Haven't had one of these in probably 20 years, I seem to remember them being a "greasy". Never smoked one before so open to ideas for a possible turkey day replacement seeing as how there will be only two of us.. I assume a brine would be the first step.
Any suggestions?

Man this brings back memories. In the early 80's I was roughnecking out in the panhandle, single, working 7 days a week on a drilling rig & living in an extremely small trailer that should have been burnt and destroyed years before I rented it.

Bought a couple of Cornish hens and cooked 'em in Campbells cream of mushroom soup for my Thanksgiving meal that year. Took the leftovers to work with me that day. That was a real treat during my "Starvin' Marvin" period of life :) From what I remember it was freakin' good.

I’ve Que’d a truck load of those “little chickens” that’s what my wife calls them. But seriously the game hens are for me no brine just rinse and season and go into a 300-350* smoker. Let them roll till done. Very tender and delicious. Meat Church Holy Voodoo is good lately, but I also apricot glaze them sometimes too.
 
Mmmm Hens are good.
You can brine and/or marinate if ya like.
Great on grill or smoker, and not greasy.

I don't have a spinner, so it will be season up and throw them in the smoker. I do have some Holy Voodoo but don't know how that will go with corn bread dressing. Gotta have my dressing with cranberry sauce.. My dad made the best dressing but I never mastered it and neither has the wife. At least we don't do box stuff
 
Don't know how I missed this post Jake but man those are 🔥! I love the McCormick marinades too. The Brazilian Steakhouse especially. I'll have to try the citrus.
