Good Day Everyone. I've got a 23lb bird that I'm grilling for 4pm eating time tomorrow. Can someone give me the temp I should be using and how long they think it will take? I can either put it on tonight or first thing in the morning. I'm guessing that with it Spatchcocked I can just put it on 8 hours before eating time? Let me know what you all think. Thanks in advance!

If it's spatchcocked & your smoking it at 300-325 degrees, your looking at about 15 minutes per pound.

So about 5 hours cook time.

Your looking for a final temp of 165 in the deepest part of the breast.

So if you pull it off at 155-160 & rest it on the counter, the carryover cooking will bring it up to 165.
