Cooking a turkey, temp and how long???

    How long on an average does it take to cook a turkey and what temp is a good temp to cook it at. Also if you've got a good recipe please share and if there's a rub or not. I've never done a turkey so I kinda need to know when to start it so it's done by 3 pm. Thanks Tim

    Personally I do mine a little different I usually use Travcoman45's brine overnight then rinse and dry it off, a light coat of Jeff's rub or just some spices then into a 325-350 degree smoker. The high heat produces a nice crisp skin I probably loose a bit of the smoke flavor but it still has a good flavor to us and crisp skin is required around here. It also cooks a lot faster at the higher temp

    Besides following Piney's link, I also inject mine with Tony Chachere's creole butter injection until it oozes out every where. I cook mine between 225-250 and it usaull takes about 7-8 hours but use a probe to check the internal. I think brining is a must also.

    I'm with Jerry on this one too. I think that travocoman's brine is the bomb and then Jeff's rub is good too. So stick with it and you wouldn't go wrong.

    My notes from my smokes say ~6 hours at 250 for a 12lb turkey.
