Cold Smoked Chex Mix

Well it's not sausage but my TSM Red Roof is versitile and cold smokes great.
Maple/Bourbon chips smoking some chex mix. No the smoker has no heat going inside.

I just received my TSM red roof smoker and was wondering if I could get your opinion on it. I have seen your posts here and in the makers hub Facebook group. Unfortunately TSM is still using the novus controller with the separate inkbird Bluetooth thermometer. I have purchased the auber fan kit and already own a smokin-it bella smoke generator. Would you recommend, knowing what you know, run the smoker with the current novus controller or cut the bs and replace it with the auber AW-1520H right out the gate? Thank you in advance for any expert advice you can provide.

Howdy

You cant run the novus in conjunction with the Auber. What I did was remove all the original electric (Take pics before you remove all the wires) then I wired the element to a HD extension cord which plugs into the back of the Auber. Use the Auber temp probe to operate the PID.

So yes cut the crappy novas out and do the Auber.

Thanks for responding. I tried running as is and it was a pain in the ass. Temps all over the place! I did a write-up in the electric smoker section but it's waiting for admin approval because I'm new here. Really appreciate your input.

One last question while I'm waiting for the Auber controller, are you still using the original heating element? If so, are you happy with the temperature range or would you ever install a stronger element?

When I cold smoke items I do not use any heat, its just generated cold smoke with my cold smoker add on.

Yes use the original element but wire it direct to a heavy duty extension cord, by pass all the original electric.

I got my bella cold smoke generator and the auber fan installed. Just wanted to make sure the coil element wast another point of failure. The pid controller was on backorder but hopefully will ship out this week so I can get everything dialed in. Appreciate your support.
 
Did you et the wifi PID.

If so make sure your network is 2.4ghz because the pid will not work with 5ghz on their app. The pid will still work if you manually set the 6 set temps on the unit itself.

I did purchase the wifi pid. We live in the San Juan mountains in Colorado so we needed to purchase a Starlink as it's the only way to get reliable Internet up here. My connection is 2.4ghz.

You already know with the cold smoking and all the amazing sausages you've shared on this site, I'm just chasing the best dialed in and controlled smoker I can. Meat's expensive these days so I just want to treat it right.
 
Was wondering what you thought of these Rick? I had done Jeff's Smoked Chex Mix he has on his site. Was not sure if I was getting bad smoke or what but was not a fan of them. Cold smoking may be the way to go on these?
 
That would be the ticket for that . Cobalt or Titanium bit . Be easy to do .
I used to have a huge set of drill bits that I got from my aircraft days.

But when my sons were getting into the tool use age all my bits got misplaced or lost. I was in my tool box and looked for my snapon 1/2" drive set, asked one the boys if they used it? Oh yeah we were building a fort out back....."Go get my set"

Had the 1/2" socket gone.....Say bye bye to your allowance for a month...lol
 
huge set of drill bits that I got from my aircraft days.
I used to do a fair amount of clean room work . A lot of stainless panels and brackets . I had single titanium bits because some of the sizes in the sets didn't get used .

I have Snap on and Matco in my Mechanics box . Quality tools .
