So, I finally talked the better half into getting me a smoker. She bought the Electric ECB for me and I'm excited to start smoking with it. I know I need to add a thermometer for it, but I've got a good wired probe thermometer that I'll use the first time I use it. All I've done so far is season it, but I'm not sure it got hot enough. After 3 hours, it was still not too hot for me to touch/handle the lid. I know I need to do that again. i'm going to setup a windbreak when I season it (again) and I'm going out tomorrow to get a welding blanket for it. I'm hoping to do either a brisket or some ribs first! I'm going to post my questions on another forum, but I wanted to introduce myself first. BTW - this is the first time I've ever seen one of these on a forum: LOL.
