Chipotle Sweet Potatoes
8 Servings
2 ½ lb. sweet potatoes, peeled & cubed
½ Cup half & half
3 Tablespoons butter, softened
2 Tablespoons freshly squeezed lime juice
2 chilies from a 7 oz. can of chipotle peppers in adobo sauce - chopped
½ Cup brown sugar
¾ teaspoon salt
¾ teaspoon cinnamon, divided
Preparation -
Place potatoes in a large pot and cover with water. Bring to a boil, reduce heat to medium-low and simmer 15 minutes, or until fork tender.
Drain potatoes and return to pot. Add half & half, butter, and lime juice, mash to desired consistency. Cook mixture 2 minutes over low heat, or until thoroughly heated.
Remove from heat and mix in chilies, brown sugar, salt and ½ teaspoon cinnamon.
Transfer to a serving dish and sprinkle with remaining ¼ teaspoon cinnamon.
