Anyone ever try making chipotle powder? I was thinking of smoking some jalapenos and then dehydrating them to the point I could crush or grind them into fine powder. Thought it would be good for adding to rubs and chili. Also thought of mixing some of the powder with salt or maybe grinding some sea salt with the peppers when I grind them, thought that would be good for burgers and stuff on the grill. Any ideas?
 
I know Smitty slices them and dehydrates, then coarse chops them...THEN dehydrates again, and then grinds. Japs are tougher to dry, and the second drying period makes it alot easier to get powder.
 
Richtee is right on it again, jalapenos have a thick wall and it is hard to dry in one shot, so do cut them down as much as possible. If you aren't working with completely dried chiles, it can clog your grinder. Dehydrating takes quite a few hours, and the aroma can easily overpower a room. But then the end product is well worth the wait. I usually don't mix anything else with it, just my way of controlling quantity.
 
I'm gonig to use my dads dehydrater its an Excalibur, one of the big square kind and it does a really good job. Should I slice the the peppers before I smoke them?
