The right way to make chili? The way your ancestors did. your parents, aunts, uncles, cousins.

The way your in-laws do. The way your kids enjoy it. The way the High school concession stands did.
Bottom Line. The right way to make chili is your memories, your house and your rules.

Ground sirloin
Cubed smoked ribeye steak
Onion
Garlic
Mexene
Cumin
Small tomato paste
Beef stock
Coffee

It looks more like a goulash to me...and I love goulash!...or sort of like a barbacoa. Looks delicious.

But like you said, it's your chili, make it they way you want. I see people all upset in foodland out there...recipe review comment sections, etc. where people dont necessarily say they made the dish and didn't like, they are just sniveling that its not "authentic". Chili is one of those things people can get testy about. I mean its fine to say thats not how I grew up eating it, but dissing someone over it to me is asinine. I've been on at least one cooking forum where it was like that. Never understood why people want to be combative about food.:emoji_angry:

I like experimenting. I have one I call "Italian Chili" and its delicious, but could upset chili puritans and Italians...or I should say people in America who have been here for generations that call themselves Italian for some reason...

Looks fantastic! I don't use any ground beef in chili anymore and just use cubed beef stew meat I get back from the processor. Everyone loves it.

I will often jokingly refer to Chile, Chili, Chilli or however you spell it...
People argue about it's proper spelling too. :emoji_rolling_eyes:

I will often jokingly refer to someone else's chile as heretical or accuse them of heresy, talk about Purist recipes, whether it should have beans or no beans, how real chile never saw a tomato, the folly of ground beef or whatever just for fun.

Truth is, I make it and eat it many ways,
and have seldom, if ever, turned down someone else's chile.
Unless maybe it was that crap 💩 Pumpkin Chile some vegan entered in a chile cookoff I was entered in.

You made me look it up.

Pumpkin chili...OK, I have an open mind but some people go farther than I would for sure! Vegans have to be very creative...

I DO make a pumpkin ice cream, sugar free. I do it because like so many women, my wife is infatuated with everything pumpkin spice so I make it for her. It's fantastic, but I seldom eat it...dont have a big sweet tooth.

Pumpkin ale? Sure! Pumpkin chili? NFW!
I grew up with chili with beans, so that's how I like it. I like to vary the beans now that there are so many more varieties that weren't available to my mother in the 60's-70's. But I wouldn't turn down anyone else's, either.
My son was a challenge, as he didn't like beans. But I once found a bag of pebble-sized potatoes and substituted those, and he really enjoyed that.

If you ever smoke a whole brisket sometime, try your chili using the flat from the brisket!
