Who has dried chili peppers in a dehydrator and how did you prepare them????

That was going to be my next question. Labor Day weekend I'll be buying a 30# sack of fresh New Mexico green chile, and I'll only have them roast half the bag. My new American Harvester should be delivered by then, and I want to try dehydrating some of the fresh chiles. Hope you get some help soon, I'll be watching.
 
My dehydrator is probably the cheapest thing around. Doesnt even have a fan. Works great on peppers and tomatoes but dont think I would do jerky on it.

Anyway when drying ceyennes or the like I pull the cap off and slice the top open to speed up the process. When drying habeneros I slice them in half and dry them cut side up. If this works on my unit it should be a breeze on a quality piece.
 
Never did chilli peppers but we just thread hot red pepper on string and hang them around the house like Christmas lights.
 
made some Jalopenio powder last fall...cut off tops...sliced in half...just wanted the flavor..not the heat..so removed the seeds and white strips ...took about 12 hours in the dehydrator...then ground them into a powder with a coffee grinder I use to grind spices...USE A DUST MASK....ya don't want to breath that dust...it will suffocate ya...

I had to cancel my original order, after a month they said it was on back order. I got even with them, I ordered a more powerful unit from Amazon and got it in 6 days with no delivery charge. I've got some fresh green and red New Mexico chile in it right now. All I did was create a length-wise slit on the side. I left the seeds and membrane, I'll use them for a sauce not a powder. If they come out OK, I'll post some pics. I usually take a pic of everything I work with, just for reference.

I've dried habaneros in my dehydrator. I cut the caps and stems off to have more drying surface. Cutting in half would be even better. I ground mine up in and old coffee grinder. Potent stuff!

Tip: If you use a coffee grinder, grind some dry white rice when you're done. This cleans it up pretty well.
 
good tip, but after the rice, i then tear up a piece of bread, and put in the grinder.........that removes the dust the rice leaves behind......now the grinder is NICE and SHINEY..........hehehe
 
I think everything has pretty much been coverd except smoking some of them. I smoke peppers as well and then go through the dehydration, coffee grinder deal. I know some don't like seeds but I do so I grind all of it except the stem.



Do some smoked and some not and you'll be amazed and plesantly surprised at the difference in taste with the same pepper. For what it's worth, I smoke them with applewood. Smoked japs are great, hence the Chipotle aspect.
 
Any follow-up comments on the smoking & drying?

I want to smoke anchos/poblanos, jals, etc but don't know how long and if they'll dry in a smoker (Masterbuilt electric.)

In the past, I've just put the peppers in my old gas-on-gas stove and either closed the oven door or just barely had it cracked open. The pilot light flame was enough to keep the temp between 100-120 degrees. Come back a couple days later and the peppers are dried crisps ready for the coffee grinder or paper bag if not grinding until usetime. Free pilot light that I can't turn off anyways doesn't cost me anything additional like dehydrator electricity would...

Maybe smoke the peppers and then put in oven same way?
