Chicken/Turkey MeatLoaf Suggestions

    I'm going to be smoking a meatloaf this weekend. My youngest won't eat beef and I am not supposed to so it's going to be a mix of ground turkey and chicken. She is very picky and won't eat it if there are any chunks in there, so no peppers, onions etc. I'll have to make it up with onion and garlic powder. Anyone have a suggestion for a good basic recipe that would work for the milder meats I'm using in this meatloaf.

    I'm going to serve it was some garlic smashed taters and some ABTs if I can get some jalapenos. Maybe I'll take some of the meatloaf mixture and throw it in a red bell pepper too.

    When my brother and I were younger we didn't like any "chunks" in the meatloaf, so my stopped putting in onion and green pepper...so we thought...here she was grinding the stuff up in a blender so you couldn't see it!!! We even told her it tasted better without that stuff in it!!! [​IMG]

    I myself would add some rosmary,basil and some lemonpepper along with garlic and onion powder!

    Sweet basil and oregano are great w/ meatloaf. Also a couple of pinches of ground ginger will round it out very nicely.

    Here is one that I like ....

    Smoked Turkey Meatoaf

    Ingredients
    • 3/4 cup ketchup
    • 2 pounds ground turkey
    • 1 cup chopped onion (1 medium onion - use a food processor to get rid of the "chunks")
    • 2 sandwich bread, torn into small pieces
    • 1 cup grated cheddar cheese
    • 1/2 chopped dill pickle, (1 medium pickle)
    • 1 tablespoon Worcestershire sauce
    • 1 large egg, lightly beaten
    • 2 garlic, minced
    • 2 teaspoons dry mustard powder
    • 1 teaspoon salt
    • 1/2 teaspoon freshly ground pepper
    Directions
    1. In a large bowl, mix 1/2 cup ketchup with the remaining ingredients until well combined. Place mixture in loaf pan and brush tops with remaining 1/4 cup ketchup.
    2. Smoke @ 250 degrees until internal temperature registers 170 degrees.

    TulsaJeff also has a receipe on the home page of SM.com. Tried it, it's good.
     
  7. O.K. so i dont have kids.. but i love em... Heres my suggestion take it or leave it..Take all the ingredients u like ina meat loaf and grind them up into powder/tiny pieces.... Get the flavor without affecting the texture of the loaf.. Maybe the kids wont know,,, but when u eat it... you'll know its there! Let us know how it goes over with ur kids.
