Chicken Trio

  1. Brined 3 whole chickens for 24 hours, then smoked them this morning.  Here is a before, during and after series of q-view for ya.

    After removing from the brine, patted dry and ready for the seasoning:


    Seasoning was a mixture of 1/2 Jeff's Rub recipe and 1/2 McCormicks as seen in the next 2:


    a couple hits with the Magic Bullet and here is my rub:


    All dressed up and ready for the smoker:


    In the smoker, probes hooked up and ready to go:


    Toss on the extension pipe for the vent:


    Fire it up and double-check that the smoke it going up...


    Exhausting nicely:


    3 hours later this is the end result:


    The smell is about killing me right now, but I have to go to work and wont get this til later.  Each one gets wrapped in heavy duty foil and refrigerated, then later transferred to a heavy duty ziplock for freezing if that is the goal.  I will be giving 2 to a friend and keeping one (her chickens...she pays me with 1).  I will toss on the Weber Grill on indirect for a while to crisp up the skip and re-heat, then devour!

    Nice looking chickens BTW, hell I can taste them just by looking at the pics.
  4. Yep - she (the requestor of the smoke) gets them from an area farm near the Minnesota-Iowa border (near here)
    Tell me about it!  Meanwhile I had friggen hot dogs from a convenience mart.  It does suck to be me!

    I would have to grab a whole bird and run for the door. Now since you have done such a good job on the yard bird I have to eat some of one of those 3. Your next big puchase should be a food saver system you will never be sorry for buying it. It will save you a bunch of money in buying your meat in bulk and you can freeze it for a longer period of time. It is one of the best purchases I have made since getting into this hobby this bad.

  9. OK, here's the update. And yes, it was as good as it looked.  Chopped that sucker down the middle from formerly head-to-tail and put one of the halves on the grill for about 10 minutes to crisp up the skin and heat it up.

    here is proof as to how good it was.

    It was sooo good, that it inspired canibalism!


    Good all the way to the bone, and inside!

    To be fair, the bird loves any Q...even more so with sauce.

    Nice looking chickens!

    Not sure what you have that Cookshack in, but it looks like that’s the ticket for wet weather smokes.  [​IMG]

    Thanks for the link. Great idea, it looks just like what I think I need.

    Butt of course I’ll have to wait a bit because mama seems to think I’ve spent a tad too much on smoking right now and I’m sure she’d notice if I brought one of these home.

    I just have to wait till I’m sure she’s not looking.
