I have been searing chicken at 700 degrees then backing the heat down to 400 degrees to cook to temp. Nice char on the skin that we like. 700 degrees is death on temperature probes (except Masterbuilts). What's the lowest temp I can go and still get a good sear?

I get good results on MBGF 1050 around 500 after I let is sit there for a minute for more even heat distribution. Usually in the 600 range for a quick reverse sear on steak or chops.

I usually sear around 500 on my webber grill, white meat i may try to go a little higher, but 500 usually gets the job done for me.
