Cheese smoking for the first time.

Got some nice cool weather here in N. Florida today. Bought a tube a while back and decided to try it. Using bear mountain Maple-bourbon-pecan blend.. Sorry for the upside down pictures. I tried to correct them' but they would only make one turn.. Anyways, I hope every1 has a great weekend !!!

Nice selection of cheese there Mike, you and the family are going to love it. It has been my experience that the cheaper brands of cheese benefit the most from smoking. We had some cool weather a couple of weeks ago and I got my Christmas Gift load of cheese done so it will be mellowed in time for Christmas. The kid's and neighbors expect it now.

My only advice - it is easy to oversmoke. Taste periodically.

My Son is the dairy manager at a local grocery chain . They just had Cabot 2 for $5.00 , and store rewards members got another kick back . Came out to $1.35 for the 8 oz. blocks .
Stocked up pretty good .
I have cheddar , gouda , pepper jack , horseradish and some Swiss to smoke .
I vac pack the Swiss and horseradish with caraway seeds . Gives it great flavor .

3 1/2 hours of smoke. 45 min rest in fridge. Now time to vac seal and label . Will open 1 or 2 in a couple of weeks to try.. I'll post how it is then.

Looks darn good! Got my smoke tube in yesterday. Gonna be smoking some cheese here in the next few days. Yours looks great!

OK, so today was a couple weeks in the fridge vac sealed. I tried a small slice before sealing and I should have just waited until today.. Day of, tasted like Fido's arse. Today it was awesome !!
