Cheese filled squeef balls

    One of the many fine foods we had at the N. FL Gathering was made by Jeff (Rio Grande), and consisted of a total of 3 ingredients: sausage, cheese, and bacon. I decided to make my first batch of these lil' cheese filled sausage balls and will take them into the co-workers tomorrow.

    Smoked them at a temp between 250 and 275 for a little over 2 hours until internal temp reached 165. Oak was used to kiss these.

    Ok - I was wondering if I screwed up the names of these. I thought squeef's were made with sausage and moink's were made with beef? [​IMG] Please let me know what's right [​IMG]

    actually the squeef is a combo between squeal(pork) and beef, and moink balls technically are supposed to use frozen beef meatballs. for more on moink balls ck this link out.

    Yes laurel they look awesome but I thought that they were moink balls but heck I was just one of the sober one there. Now moink is beef and bacon so theses squeefs balls sound just about right for Jeff. Heck Jeff might have his own name for them. Great balls of .............. you know that clear liquid that was on the table.
