Here's a new one (at least for me) I tried. Family really liked this one ....
·5 slices bacon
·1 small sweet onion, diced
·1 stalk celery, diced
·1 bell pepper, diced
·1 clove garlic, minced
·1/2 cup parsley, chopped
·1 cup bread torn into small pieces
·2 large eggs beaten
·2 tablespoons Worcestershire sauce
·1 teaspoon salt
·1/4 teaspoon ground pepper
·2 pounds lean ground beef
·1 1/2 cups grated sharp cheddar cheese
1.Preheat Smoker.
2.Cook the bacon crispy and crumble into small pieces. Set aside.
3.Sauté the onion, celery, pepper, and garlic together until the onion is soft and translucent.
4.In a large bowl, mix the parsley, bread pieces, eggs, Worcestershire sauce, salt, and pepper.
5.Add the bacon and sautéed vegetables.
6.Mix the ground meat and cheese into the mixture in the bowl.
7.Mold into loaf pan .
8.Smoke until the meatloaf registers internal temperature of 160º F.
9.Let stand for ten minutes.
Next time I may try a mixture of ground beef and ground pork.
