Seems like I’m on a casserole and or mac & cheese kick on the smoker lately. Latest creation was the carnitas casserole, green enchilada sauce, corn tortillas, green enchilada sauce, carnitas , jalapeños, green chilies, olives, and cheese and repeat. Then on the smoker for about a half hour at 200 and then another half hour at 350. My wife looking at me like I had lost my mind when I was making. It turned out very good. She even said it was delicious.
