Carnitas casserole on the smoker

Seems like I’m on a casserole and or mac & cheese kick on the smoker lately. Latest creation was the carnitas casserole, green enchilada sauce, corn tortillas, green enchilada sauce, carnitas , jalapeños, green chilies, olives, and cheese and repeat. Then on the smoker for about a half hour at 200 and then another half hour at 350. My wife looking at me like I had lost my mind when I was making. It turned out very good. She even said it was delicious.

Nice ! Love it . That's my leftover from spinner chicken go to . I do 3 layers if I have enough .
That plate looks fantastic bud .

Looks and reads delicious! I have an enchilada casserole in my recipe binder I do every fall/winter. I like the salsa verde idea, I haven't done that. I'm so hung up on my enchilada sauce, I dont often get out of that box!

Love casseroles...because I love leftovers! We're eating on the last of the several I made before summer kicked in and vac sealed. It will be casserole season again real soon!
