Hi y'all!
I'm still a Newbie around here but my brother "Squeezy" is a bit of a veteran here.
Anyway I found 2 brands up here (at Zehrs) that make bulk sausage tubes that are 1.1 LBS or 500 Grams. One is Maple Leaf (go figure) and the other is by a company called Quality Meats. Both are sage versions.
I'm think I'm going to put rub on the Maple Leaf version or maybe wrap in bacon(any thoughts on that) and leave the other one plain.
Wish me luck and I'll try my hand of puting up some food porn for everyone to see later.
Any thoughts or comments would be greatly appreciated!

Hi Again
Here are the pics a.k.a. Food Porn

Maple Leaf Butt Chops Major Smoke in Chops

Well the chops were awesome.
The chubbies weren't bad but I'm not much for the flavour of
breakfast sausage(but the smoke helps a lot).Maybe I'll get some bulk "real" sausage from our butcher north of town. They make the best garlic sausage around! Can't wait to try a pulled pork and a brisket!

Congrats on finding the fatties brian, let your bro (dad) know about them, save me a trip over there...............although i was lookin forward to makin a beer run!!!

They looked good ready for the smoker ... can't wait for the results ...

Welcome Tripple B. Good to see you on the forum. We love fatties at our house and fill extra spaces in the smoker with them every time we smoke. They are so good wrapped, rubbed, or plain. Good luck.

Well folks ... I got the promised samples and let me say they tasted every bit as good as they look ...Mmmmm!

I especially liked the shoulder chop portion I warmed and made a sammie out of ... look how that smoke ring meets in the middle ... excellent

Nice job Bro!

looks great...

you will find your local butchers bulk sausage better than the store bought ones you made,

i have eaten the maple leaf ones & similar, not the best.. the ones here in the US have a different flavor and texture...

when i am back home in canada, i dont eat breakfast sausage chubs, there is a flavor in them that i cant place but they all have it, maybe its the water..lol

down here i only eat them smoked

Yeah what's up with breakfast sausage? Mostly my stomach can't handle that stuff in the morning. I do like the sausage patties I've had while in the states. Commercial sausage here is mainly crap ... but we have some fine Butcher's around here.
