When you find a pork loin in the fridge feeling very lonely you have to send it to Canada. To become Canadian Bacon. So rubbed TenderQuick and brown Sugar into it and let it take the slow train to Alberta. It stayed in my fridge for 10 days. Pulled it today rinsed and coated in some Poison Oak Honey. I know most of you are shocked that I would use Poison Oak Honey but my Aunt is a bee keeper and I have to say it is the darkest honey with the best flavor, and will cause no itching.

So here goes.



Then off to the smoker.

Yes you better for that one won't be around that long. It looks like the cure made it all the way thur it too. Ypu better go right to the store right now for you will eat that one pretty darn quickly and need more.
