Butt without the Crutch

I have always done my pork butts using the low & slow method with the Texas Crutch. This time, out of curiosity, I decided to try it without the Crutch to see how it would turn out. The bark on this baby is AMAZING, especially since it was done low n' slow at about 225 the entire time. We'll see how juicy it is once it has some time to rest.

I never wrap a butt just rub :emoji_laughing: , never had a issue with being dry, like anything else fall asleep and anything can dry out, have boiled chicken that was drier than the Sahara lol.
 
I haven't wrapped much of anything, prefer to raw dog it all day.

Good looking shoulder.

That looks nice and barky! I never wrap and I also cook at 275F. A pork butt won't care what temp you are cooking it at, as long as you aren't burning it.
One thing to note though, if you use sugar in your rub it can burn if cooking too hot. People report staying 250F max if using sugar in the rub. I don't use sugar :D

I prefer to not wrap but I like the bark. I have watched quite a few people push the bark aside when making their own pulled pork sandwiches so I wrap when cooking for large groups.
 
I use a 5 finger puller in a drill, I pull till it is all shredded, no picking around grab a big tong full and drive on. It makes portioning a lot easier when you have a set number of folks to feed.

Shit, I need to try this. My hands always get tired but I feel like a little b**** complaining about it, so I just suck it up :emoji_laughing:

How do you attach the puller to the drill chuck?
 
LOOKS GREAT. Cut that butt in half and then you get 2x more bark and half the cook time.

Just like a drill bit.
 
Go through the Amazon link on this site so they get a little kickback for putting up with us. Also put your meat in a old stainless pot and no worry's about getting metal shavings or scratches .
 
Ahhh OK this makes a lot more sense. I was picturing the handheld bear-claw type puller. I didn't realize someone made this! Damn what a great idea.
