Great day at to be in the backyard yesterday - wife and baby came home for the weekend, great friends came by, great food eaten by all, great beverages to wash it down with.

Started the night before with all this good stuff:

Beef Back Ribs




Spares





And a London Broil



Got a bunch of Q-view, so I'm gonna break up the post in sections.

Getting everuthing ready...

The beef ribs:
Unpacked & rinsed off


Takin off the membranes



Rubbed down with Uncle Chris's Gourmet Steak Seasoning


The Pork Ribs:
Unpacked and rinsed


Removing the membrane


Trimmed up St Louis


Dusted with Jeff's rub


The London Broil:
Rinsed off, ready to rub


Rubbed down with Canadian Steak Seaoning

Started the smoke around noon Saturday. Pretty hot and muggy yesterday, so I popped a beer. But only had one...


Had a big ol' mess of trimmins from the ribs


Trimmins fixin to go in


Trimmins flipped, spritzed after 1 hour


Pulled the trimmins after 2 hours
 
Beef Ribs....

Fixin to go in


After 1.5 hours, then foiled for 1.5 hours. Ready to go back in to firm up a bit


After the last hour in the smoke, ready to slice


And a pan full of ribs
 
The Pork Ribs....

Ready to go in for the 3-2-1 method


Turned and spritzed after one hour


After 3 hours, ready to foil


After the foil, ready for the last hour of smoke


Ready to slice....


And the pan "full" of ribs (I vac-packed two slabs to keep for me! Can't share everything!!!)
 
And finally the London Broil. Big kudos to sumosmoke on his LB smoke that gave me the idea on how to prepare mine, being my first effort at LB.

Rough chop of onions, bell peppers, red potatoes & minced garlic, tossed with EVOO, a good spash of beer (I didn't miss it...), worc sauce S&P.


Somewhere I missed some pics. I seared the LB for 4 minutes per side. Then placed it directly on top of the veggies and into the smoker.

Pulled the LB when I got to 135 internal. Wrapped it in foil and a towel, dunked in a cooler to rest till everything else was ready.


Kept the veggies in till the taters were not crunchy


The LB sliced....




Forgot a pic for the beef ribs. I did get my hands on some mojo. Splashed the ribs with mojo for the 1.5 hour foiling.

Sorry, forgot the last pic and a little play-by-play.

My wife (Queen of the Microwave) got hold of a friend's tater salad recipe. She done real good!!!!!


The pork ribs were excellent, as was the LB. The ribs were so tender one rack fell apart when I was takin it out of the foil. The LB juices added a wonderful flavor to the veggies in the pan. The LB itself was done to an almost perfect medium / medium-rare. Tender enough to cut with a platic spoon and super flavor.

The beef ribs tasted amazing! The smaller racks with the stoooooopid pullback were not fall-off-the-bone, but it wasn't a tug fest. The larger cuts were a bit of a struggle, but the taste made up for the effort. Did em 1.5-1.5-1. Maybe I'll keep em foiled for 2 hrs and splash more of a liquid base (vs mojo) to get a better "braise" to help in getting them more tender.

All in all, a another success. Too many to count, but thanks to all who shared ideas with the LB and beef ribs, and to Dutch - the beans rock!
 
Thanks Bro! I think it was my best effort yet at keeping temps steady. Targeted 250 and was able to keep 240 - 260 with "minimal" effort.
 
Forgot to mention about the trimmins from the spares ... Of course we's gonna snack on them, but I had to post a guard on the half that I put away to dice up for the beans. Considered an armed guard...

Thanks to all for the kind words. Everything turned out DELISH!! Another bump to dutch - the beans were incredible! And another bump to my wife (Queen of the Microwave) - her tater salad went so fast, we were extremely disappointed to not have any leftovers!
