If you remember the packer I bought last week well here is what I done with it!! Enjoy!!!

I decided to try my hand at separating the point and the flat. I wanted to cook each piece on its own to experiment with how they turn out.

I seasoned both pieces with SPOG and topped off with my go to BBQ rub.

Started the offset with some lump charcoal and ran post oak and pecan splits at 250. Temp control was a breeze after the install of my baffle plate and smoke ran thin all day.

12 hours later here is what we ended up with. Paired with Mac and cheese, baked beans and corn.

That is one fine looking heap of BBQ right there Adam. Great job. That'd rival anything I've ever seen even at the best BBQ joints in the area, and there are a LOT of them.
