Brisket, ribs, ribs, sausage and bologna

Well, since there is only 2 of us , I am cooking a 14lb brisket(Costco), 3 racks of St Louis ribs(Costco). 2 racks of 5 bone chuck short ribs (Rowes) , a 2.5 lb chub of Bologna( Rowes) and a couple of beef sausages for snacks while it's all cooking.

Man that all looks great... BUT... I see one problem... Now you'll have so much smoked meat in the freezer that you don't/won't have an excuse/reason to play with fire and drink beer ...

HAHA... I seriously just remembered that I ordered 4 beef rib plates from CPB. Arriving Wednesday.

Beef ribs done. Brisket will be done, whenever it wants to be . But it is looking good so far.

They pleasantly surprised me.. When I went to Rowes they had the cut short ribs. So I asked the butcher guy if they had any whole plates and to my surprise they did.. They were 5 bone plates and the 2 plates together were only $70. I have some 4 bone coming from CPB this week and lets just say they are more expensive.
