Brisket, RFX, and a BFG...

Had really hoped the RFX probes would be in by now. Sort of half joking I guess, ThermoWorks said they would ship in September. Well...it's September. :-) But I couldn't wait any longer and needed to do a decent sized overnight packer brisket. When I got things setup, I realized something I will miss is the ability to have 2 ambient probes. I'm pretty sure the RFX gateway will only accommodate 1 ambient. This RecTeq RT2500 (BFG) is crazy uneven from left to right; right being the hot side. It works out well for a packer as I keep the point on the hot side and things generally finish at the same temp. But using the ThermoWorks Signals, I keep an ambient probe on each side of the meat. And to further extend the Greek Tragedy that is this cooker, the control temperature is in no way accurate to reality. But as they say, it ain't rocket science and we get the job done. Using the Signals probes, I adjust the RecTeq until the 2 Signals ambients average where I want to land. Nothing really special here, but since I haven't posted in a long time, I thought I would share.

Brisket went in the smoke at 17:00 9/7/24. Plastic wrapped, foiled, and papered at 02:00 9/8/24. Out of the cooker and into the cooler to rest at 11:00 9/8/2024. Flat about 195°; Point 197°. Will rest in the cooler for dinner, keeping the Signals connected to ensure it stays at food safe temps.
14.8lb package weight. 12.04lb after trim. Coated with the sweet nectar of the mighty Chick Fil A sauce and Kosmos SPG.



This was at startup (smoker leveled at "set temp"). One of these dudes are lying. I tend to trust ThermoWorks more than RecTeq.

About 4 hours until dinner, still resting nicely in the cooler.

Me thinks your dates need checking. Today is the 7th, but the brisket looks good.
