Brisket on the pellet grill

Pu a 17+lbs brisket at Kroger for about $34, also found a shaker of jeffs rub at a discount clearance store. Rubbed with mustard and a heavy coat of Jeffs Texas style a little xtra fesh ground pepper and a quick twist of smoked chili sea salt.got the Austin set on smoke and p5, LJ hickory pellets.
 
Got 3 temp probes going 1 in the flat 1 in the point and 1 at grate level

I buy my briskets at Sam’s. I use just salt and pepper with hickory pellets for about 14 hours. Best stuff on planet earth.

I bet yours will be great!
 
P6 fat thumbs on the cell phone computer is down headed to repair shop tomorrow
 
Trying a little different approach fat cap down and on the top rack, good thing about a pellet grill is the temp adjustment is easy so can ramp the temps up to finish when needed
 
Oh and a pan under to stop the direct heat that might come from the plate
 
143 in flat and 147 in the point, added water to the pan to help retain moisture as the fat wasn’t as much as smaller briskets i have cooked
 
Looks good. Can’t wait to see the finished brisket! I have been looking at pellet smokers for awhile now. I have a MES now actually my second one. First one lasted 8 years. How does the ambient tempature seem? Are they stable? My MES seems to fluctuate 5-8 degrees +or-
 
They are pretty stable after it gets to temp, its not unusual to get a 15 degree swing either way, thats plenty close for my cooking and have seen it stay around 5 , wind and outside temps affect evey thing, will use a moving pad or some such this winter

Several things I learned with this cook, a large baking sheet on the main grate deflects the heat and tricks the thermistor, grate temp and door thermometer were reading the same which was about 30 degrees lower than set point,i had the brisket on the top rack to see if it changed the smoke profile,not sure my old taste buds could tell a difference. I think I have figured out what is missing from the smoke in pellet cookers and its the harsh bite from hickory that mellows out oy after a long cook, might be knocking some bad carcinogens out of the mix that might not be a bad thing for me, cancer is bad in my family,sister was diagnosed with lung cancer last week, she is 3.5 years younger than me
