Brisket, meatloaf, ABTs and beans....

    Decided to do a brisket today. Fired up the Egg at 3:30 this morning and had the brisket rubbed down with Bovine Bold and on by 4:30. Also threw on 2 fatties, a hot JD for the beans, and a JD regular for breakfast. (No pictures of that, take my word for it.)

    Diced up onion and pepper for the meatloaf and tossed them on the Egg with a little bacon. See the brisket hiding under the bacon.



    The Brisket was up to 202 degrees about 2:30. Pulled it, wrapped it and into the cooler it went. Put in the meatloaf. ground beef, sausage, the afore mentioned onions and peppers..
    Dusted them with Bovine Bold and Yardbird just for fun...





    The brisket was tasty, but no smoke ring. Ran this cook with apple and cherry

    nice job. what was that paper under the meat loaves? did you leave it there through the smoke? just curious.

    congratulations on a successful smoke.

    Parchment paper - needed a way to keep the loaf from falling through the grates. I did leave it on throughout the entire cook, next time I may remove it with a little time left to allow the bottom to "crust up" some. I like the outside of my meatloaf to have a little crust.

    L-M - nice touch with the parchment paper. That's one of the underestimated great cheap cooking tools out there!

    As always, fabulous looking qvue. The meal looks so good that I am tempted to see if my cat will lick the screen. Thanks for sharing!!

    Good work putting it all together on the Egg, and loading up that cooker. Nice utilization of resources and methods. Looks pretty tasty too...keep 'em coming!
