Brisket in Sous Vide??

Have cooked a few briskets over the years but have a timing problem this time. Has anybody cooked the brisket, let it cool then reheat SV?? Want to cook at home, freeze then put in SV for about 4 hrs. at 140? 170? 205?? Doing this because this is an RV trip and can't take smoker with me. Any suggestions??

Yep, you can do that. I'd go 140°. I don't think it will need 4 hrs in the pot, though, you're just reheating it.
