Needing to get some idea on how long it should take me to smoke a 7lb brisket? And I am only needing the time actually on the grill. I will wrap it in blankets and let it set for a couple of hrs.. I have invited my in-laws over and want to time it out right. Going to have brisket, wicked baked beans, and even making the bbq sauce. 1st smoke of 2008.

Any help would be appreciated. thanks

I cooked one a week ago in about 7 hours. I hope you've started it by now!

you can figure about 1.5hrs per lb. Remember to smoke to temp and not time. Time is just a guideline.

And don't forget about the darn plaetue(?), that may throw you off a little. But most of all listen to Glued, it not about time, it's all about temp.

Thanks guys. I do have a digital thermometer that I will be watching and will cook by. Just trying to get a ball park idea so I can plan on having it all done before the in-laws arrive..

Well, I put the brisket on at close to 4am this morning. I did have trouble getting up to 170 deg because it was below freezing and windy, so I took it off at 155 deg, foiled it and stuck it in the oven. It was on the smoker for almost 5 hrs, so it should have plenty of smoke. I took it up to 190 deg in the oven and it is wrapped in towels in a cooler for the next 2 hrs. I have never finished one this way and hope that it will still taste good. And I just took my wicked baked beans out of the oven and they taste great. a little on the spicy side, but that is how I like them.. Just hope the in-laws like it all because I was up way too early on a Sunday getting it going. I am getting hungry...

When we want brisket, I smoke it on Saturday, and we eat it on Sunday...and Monday. Monday I take all that is left to work for my crew to eat with me. I smoked one yesterday, I pulled the point while my wife sliced the flat- at 3:00 a.m. It is in the oven with some beans warming back up.
