Brining then Freezing again?

I have a dilema. I was planning on smoking some chickens today. I have them brining as we speak. But, due to an emergency at work, I must head to the office today, thus no smoking for me.

Can I re-freeze my brined chicken? I won't be able to smoke again until next weekend, and I don't want to throw away some perfectly good poultry.

Every time you freeze, thaw, then refreeze and thaw, the ice crystals in the muscle tissue breaks it down, making it mushy. Wont be near as good.

Just an idea....... have you thought of putting them in the oven at say..
230* and slow roasting them for about 3 hrs (use a thermometer and set the timer so the oven turns itself off). Wont have the smoky taste, but the birds are still very tasty.
