Howdy glutens and non glutens! Admittedly I spent some years making fun of people who claimed they couldn’t have gluten. Thought it was a myth I guess. Fast forward to karma and I got diagnosed with celiac disease. So obviously bread is a challenge. Here’s some BLTs we made on gluten free bread. Hand for size reference

That sucks on the celiac diagnosis.
I've seen bigger slices of GF bread. Don't touch the stuff myself. There are many brands of the stuff out there. When I was more active in Scouting, we had to deal with a couple of Scouts with a gluten problem. Good learning experience for the rest of the troop, but realy messes with the budget planning of an outing.
I'm waiting for the first garden tomato to ripen so I can have a proper BLT. Well almost proper. Don't have any home cured bacon
 
Costco carries Schar Gluten Free Bread. Its much more cost effective than the other stores.

Sorry to hear that you have this but once you adjust its not bad. My sister in law has it and my girls can't have Gluten so I understand the struggle.
 
That’s no fun Jake. My oldest son was born with celiac. Took us 12 years to get a diagnosis, but then everything made sense. It’s an adjustment for sure. I figured life would be pretty easy living a meat and taters type diet, but my boy is more of a bread and pasta kinda guy.

So where’s the bacon?
 
Sounds tasty Jake! Those pork rinds make for a good GF snack but also crushed make a great breading for things.

I've been running solo for several days (wife is tending to a sick family member) so I decided to have BLT for lunch yesterday. By the size of those sammiches they look more like BLT sliders!

Man I hate that you're having to deal with that. Now I'm gonna be googling about glutens & Celiac.
 
HELL JAKE, HALF THE FUN OF GETTING OLD IS ADJUSTING TO ALL THE THINGS WE CAN'T DO ANYMORE. IT GETS A LITTLE WORSE WHEN YOU START TRADING IN BODY PARTS FOR REPLACEMENT, BUT I RECKON IT BEATS BEING DEAD. RAY
 
They might be a little small but I bet they were good especially washed down with a couple of rinds.
 
Hate your going thru that but glad you're on the memd ! Love some BLT and believe I could double deckers on those.

Bummer on the celiac. Eating a BLT has to make it somewhat bearable. Imagine if it was bacon that was the culprit.

Been doing the gluten free thing for 10 or 15 years because I have to, not because I want to.

I think a lot of the fun is poked at the whole issue because a ton of people went gluten free when they didn't have any reason to.

Some of us really have issues where gluten causes an autoimmune response that does damage to our system.
 
Hmmm, could you replace the bread on those with bacon and make bacon wrapped blt's? :emoji_wink:
