Yeah, Way too much seasoning for simple beef ribs in my opinion. The go-to is just salt and pepper or salt, pepper onion and garlic (SPOG). Let the beef flavor come through.

Funny timing, my BiL just dropped off a cooler of shorties cut like this. Going to smoke them and a brisket point for him this weekend. I’ll probably also do the last 2 CPB back ribs I have

I would season them with coarse ground pepper and coarse salt and leave it at that. Smoke until probe tender like a tooth pick in soft butter.
