My question to start, how would you do both simultaneously without overcooking the beef ribs?

One idea is to keep the beef on the right away from the firebox, another is to delay adding them for an hour or so?

I will add photos during the marinade process tommorrow nite.

Any ideas appreciated
 
If you're talking about Beef Ribs & Pork Spares, I use 3-2-1 on both of them in my MES 40.

Baby Backs only 2-2-1, so either of the two methods you mentioned should be fine.

Bear has it right.  Should be no prob doing them simultaneously.  The question is: which are you gonna eat first??!!!!
