Hate to be a wussy, or whatever, but work has got me mighty tired!. I have a 2 piece 10 # brisket on the smoker. They were both @ 165* and I foiled them & gave them liquid love (EVOO & other stuff). Now, I want to go to bed, 12:11am West coast time I set the MES for 225* and am heading to bed, but grabbed one more BEER & am waiting for suggestions.
 
Remote thermometer with an alarm for when the brisket reaches temp; they are a sleep saver.
My other suggestion is since it is foiled it can be moved to an oven and finished there.
Looking forward to hearing how it turns out for ya !!!
 
Right on, just go to bed, you will be fine. I did a 2 piece brisket that way and it wil be ready for pullin' in the am. Or just refrigerate with drippings and pull later.
