I have not eaten at Midway. Most of my BBQ and hash experience is at places like Shealy's in Batesburg-Leesville or further south in the low country such as one of the many Duke's BBQ joints...

There are 319 BBQ joints in SC and 160 have hash on the menu. Here's a good read about SC hash...
I appreciate that! The Dixie Pig in Rock Hill is on the list, but theirs is more like just really overcooked pulled pork - I ate there once and don't care for it at all, I'd forgotten about it to be honest even though I drive by it 5 times a week, it's that forgettable. I'm going to scope out another one close to me this weekend.
 
Eric, it's always been around and I just took it for granted that everyone who knew BBQ, knew about hash and rice. Give it a try sometime, or better yet, come over here and try it one day, you may get hooked...😄
If I ever get that far East I will certainly hit you up. It’s all very interesting from a heritage stand point. I love that your state is keeping that alive. I watched the video that Hijack73 Hijack73 posted, very cool. However I was a bit disappointed that they were not using hog heads at all, which seem to be the beginning purpose of that hash, to use up all of the animal. The meat and broth from cooked heads would bring the gelatin and the true velvety and creamy texture.

That was how dishes such as head cheese and hash were created WAY back in the day. As I've heard said so many times, every part of the hog is used except for the squeal.

Still find it interesting that there is not a post about hash on here. It is such an integral part of our BBQ heritage that I figured surely someone before now would've posted about it. Maybe I just overlooked it...
 
Great write up/recipe Charles and so true. We have Brunswick stew but starting around Augusta is hash territory! Tried it many years ago with relatives from the area. Enjoyed the flavors but can't take the place of our stew, that i grew up on and is standard at most BBQ joints down here.
Oh and they're not fond of our Brunswick stew😆
